Cooking Instructions:
In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk together until well combined.
In a separate bowl, beat the egg, then add the milk, melted butter, and vanilla extract (if using). Mix well until all wet ingredients are combined.
Pour the wet ingredients into the dry ingredients. Gently stir with a spatula or wooden spoon until just combined. It's okay if there are some lumps; avoid overmixing to keep the pancakes fluffy.
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of butter.
For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes until golden brown.
Remove the pancakes from the skillet and keep them warm in a low oven while you repeat the process with the remaining batter.
Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
