  • Begin by cooking the tortellini according to the package instructions. Drain and set aside.
  • In a large skillet over medium heat, add the Italian sausage. Cook until browned and fully cooked, breaking it apart with a spoon as it cooks.
  • Once the sausage is cooked, drain any excess grease and lower the heat. Add the ricotta cheese, garlic powder, Italian seasoning, salt, and pepper to the skillet. Stir until well combined and heated through.
  • Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of marinara sauce on the bottom.
  • Take the cooked tortellini and stuff each piece with the sausage mixture, then place them in the baking dish in a single layer.
  • Once all the tortellini are stuffed and arranged, cover them with the remaining marinara sauce and sprinkle the grated Parmesan cheese on top.
  • Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden. Remove from the oven and let it cool for a few minutes before serving, garnished with fresh basil if desired.
  • For an extra touch, consider adding some sautéed vegetables like spinach or bell peppers to the sausage mixture for added flavor and nutrition. You can also experiment with different cheeses, such as mozzarella, for a creamier texture.
