Rice Cake Dessert Recipe

Ingredients

  • Ingredients:
  • - 2 cups cooked rice preferably sticky rice
  • - 1/4 cup sugar
  • - 1/2 teaspoon vanilla extract
  • - 1/2 cup coconut milk
  • - Fresh fruits such as strawberries, mangoes, or bananas
  • - 1/4 cup shredded coconut optional
  • - 1 tablespoon sesame seeds optional

Instructions

  • Cooking Instructions:
  • In a mixing bowl, combine the cooked rice, sugar, and vanilla extract. Use a fork or your hands to mix the ingredients until the sugar is well incorporated and the rice becomes slightly sticky.
  • Line a square or rectangular baking dish with parchment paper. Press the rice mixture firmly into the bottom of the dish to form an even layer. Make sure to pack it tightly to avoid crumbling later.
  • Pour the coconut milk evenly over the pressed rice layer, ensuring it covers the entire surface. Allow the mixture to sit for about 30 minutes to absorb the coconut milk.
  • Preheat your oven to 350°F (175°C) and bake the rice cake for approximately 20-25 minutes, or until the top is slightly golden and set. Remove from the oven and let it cool completely in the dish.
  • Once cooled, lift the rice cake out of the dish using the parchment paper. Cut it into squares or rectangles. Serve it topped with fresh fruits, shredded coconut, and sesame seeds, if desired.
  • For best results, consider letting the rice cake sit in the refrigerator for a few hours before serving. This allows the flavors to meld together and enhances the overall taste. You can also experiment with different toppings and sauces to find your perfect combination. Enjoy your delicious rice cake dessert!
