Cooking Instructions:
Season the pork tenderloin generously with thyme, paprika, salt, and pepper. Ascertain that all sides are coated evenly.
In the bottom of the crockpot, layer the quartered Yukon gold potatoes, sliced carrots, and onion. Add the minced garlic on top of the vegetables.
Place the seasoned pork tenderloin on top of the bed of vegetables. Pour the chicken or pork gravy over the pork and vegetables to keep them moist during cooking.
Cover the crockpot and cook on low for 4 hours or high for 2-2 ½ hours, until the pork reaches an internal temperature of 145 degrees Fahrenheit.
