Pork Tenderloin Recipes in Crockpot With Potatoes and Carrots

  • - 1 pork tenderloin about 1-1.5 lbs
  • - 4 Yukon gold potatoes quartered
  • - 3 carrots sliced
  • - 1 onion sliced
  • - 4 cloves garlic minced
  • - 1 cup chicken or pork gravy
  • - 1 teaspoon thyme
  • - 1 teaspoon paprika
  • - Salt and pepper to taste

  • Season the pork tenderloin generously with thyme, paprika, salt, and pepper. Ascertain that all sides are coated evenly.
  • In the bottom of the crockpot, layer the quartered Yukon gold potatoes, sliced carrots, and onion. Add the minced garlic on top of the vegetables.
  • Place the seasoned pork tenderloin on top of the bed of vegetables. Pour the chicken or pork gravy over the pork and vegetables to keep them moist during cooking.
  • Cover the crockpot and cook on low for 4 hours or high for 2-2 ½ hours, until the pork reaches an internal temperature of 145 degrees Fahrenheit.
  • Once cooked, remove the pork tenderloin from the crockpot and let it rest for about 5 minutes. Slice the pork and serve it alongside the vegetables, drizzling some gravy over the top. Garnish with fresh parsley if desired.

  • For added depth of flavor, consider searing the pork tenderloin in a skillet before placing it in the crockpot. This step can enhance the dish by creating a delicious crust on the meat.
  • Additionally, if you prefer a thicker gravy, you can mix a tablespoon of cornstarch with the gravy before pouring it into the crockpot. Remember to store any leftovers in an airtight container for up to 3 days, and reheat in the microwave for a quick meal!
