  • In a bowl, scramble the eggs and season with salt and pepper to taste. Set aside.
  • Lay one tortilla on a flat surface and sprinkle half of the shredded cheese evenly over the tortilla.
  • Add the scrambled eggs, diced peppers, and onions on top of the cheese. Sprinkle the remaining cheese over the fillings and then top with the second tortilla.
  • Carefully place the assembled quesadilla in the preheated waffle maker and close the lid. Cook for about 3-5 minutes or until the cheese is melted and the tortillas are golden brown.
  • Once cooked, remove the quesadilla from the waffle maker using a spatula. Let it cool for a minute, then cut into wedges and serve with salsa or sour cream if desired.
