  • - 1 tablespoon olive oil
  • - Salt and pepper to taste
  • - Salsa for serving

  • In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, cooking until softened, about 5-7 minutes.
  • If using sausage, add it to the skillet and cook until heated through. If using black beans, stir them in as well and cook for an additional 2 minutes.
  • In a bowl, whisk together the eggs with salt and pepper. Pour the eggs into the skillet, stirring gently to scramble and cook until just set.
  • Remove the skillet from heat and sprinkle the shredded cheese over the egg mixture, allowing it to melt slightly.
  • Warm the tortillas in a separate pan or microwave for a few seconds until pliable. Spoon the egg mixture onto each tortilla, then fold in the sides and roll it up tightly.
  • Serve the burritos warm with salsa on the side.
  • Extra Tips:
  • For added flavor, consider seasoning the egg mixture with spices such as cumin or paprika. You can also customize the burrito by adding ingredients like avocado, hot sauce, or fresh herbs.
  • If you're meal prepping, you can make these burritos ahead of time and freeze them. Just reheat in the microwave or oven when you're ready to enjoy!
