Place the pork in a resealable plastic bag or a shallow dish, and pour the marinade over the meat. Seal the bag or cover the dish, and refrigerate for at least two hours, preferably overnight, to allow the flavors to soak in.
Preheat your oven to 375°F (190°C). Remove the pork from the marinade and place it on a baking rack over a baking sheet. Reserve the marinade for later.
Roast the pork in the oven for about 25-30 minutes, brushing it with the reserved marinade every 10 minutes. The pork is done when it reaches an internal temperature of 145°F (63°C) and is caramelized on the outside.
While the pork is roasting, prepare the battered vegetables. In a bowl, combine flour and cold water to create a smooth batter. Dip the chopped vegetables into the batter, making certain they're evenly coated.
