Instructions

  • Cooking Instructions:
  • Place the boneless, skinless chicken breasts at the bottom of the crockpot.
  • Sprinkle the taco seasoning evenly over the chicken.
  • Pour the salsa over the seasoned chicken, ensuring it's well coated.
  • Add the black beans, corn, bell peppers, and chopped onion to the crockpot, distributing them evenly around the chicken.
  • Cover the crockpot with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  • Once cooked, shred the chicken with two forks, mixing it with the other ingredients in the pot.
  • Serve the shredded chicken mixture in tortillas and top with your favorite toppings.
  • For the best results, consider using fresh ingredients for toppings and try to let the dish cook undisturbed for the recommended time.
  • If you prefer a spicier taco, you can add jalapeƱos or a spicy salsa.
  • Additionally, this recipe can easily be doubled for larger gatherings, and leftovers can be stored in the refrigerator for up to three days, making it a convenient option for meal prep.
  • Enjoy your delicious crockpot chicken tacos!
