Cooking Instructions
In a large bowl, combine the beef stew meat with salt, pepper, and thyme. Toss to coat the meat evenly with the seasonings.
Place the chopped onion and minced garlic at the bottom of the crockpot. Then add the sliced carrots and diced potatoes on top of the onions.
Layer the seasoned beef over the vegetables in the crockpot. Add the Worcestershire sauce, tomato paste, and beef broth to the pot.
Cover the crockpot and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
About 30 minutes before serving, stir in the frozen peas and continue cooking with the lid on.
Once done, taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
