  • 2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks fresh or canned
  • 1 bell pepper red or green, chopped
  • 1 onion sliced
  • 1 cup sugar
  • 1 cup vinegar white or apple cider
  • 1 cup ketchup
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger minced
  • Salt and pepper to taste
  • Cooked rice or noodles for servin

  • In the crock pot, place the chicken pieces at the bottom. Season them with salt and pepper.
  • Add the chopped bell pepper, sliced onion, and pineapple chunks over the chicken.
  • In a separate bowl, mix together the sugar, vinegar, ketchup, minced garlic, soy sauce, and ginger until well combined.
  • Pour the sauce mixture over the chicken and vegetables in the crock pot, ensuring everything is well coated.
  • Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  • Once cooked, stir the mixture gently to combine the flavors and serve it over cooked rice or noodles.
  • For the best results, try to use fresh ingredients whenever possible, as they can greatly enhance the flavor of the dish.
  • Additionally, if you prefer a thicker sauce, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons of water) during the last 30 minutes of cooking.
