  • Preheat your oven to 375°F (190°C). In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.
  • In an oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  • Stir in the chopped spinach and cook until wilted, about 2-3 minutes. If you're using any additional vegetables, add them at this stage and cook until tender.
  • Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle the crumbled feta cheese evenly on top.
  • Cook on the stovetop for about 5 minutes, or until the edges begin to set. Then transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and golden.
