Instructions

  • Instructions:
  • In a large mixing bowl, combine the roasted sweet red pepper strips, fresh mozzarella cheese, grape tomatoes, marinated artichoke hearts, and pimiento-stuffed olives. If you're using any optional ingredients like salami, mini pepperoni, or giardiniera, add them at this stage as well.
  • Gently toss the ingredients together until they're well mixed. If you prefer a composed salad, arrange the ingredients in groups on a serving platter instead.
  • Drizzle the salad with Dijon vinaigrette and toss again to confirm all ingredients are coated. For an extra layer of flavor, you can also drizzle balsamic glaze over the top.
  • Cover the bowl or platter with plastic wrap and refrigerate for at least 4 hours. This will allow the flavors to meld together beautifully.
  • When ready to serve, remove from the refrigerator, give it a gentle toss, and garnish with fresh herbs for an elegant touch. Serve immediately, or offer toasted baguette slices on the side for guests to create their own crostini.
  • Extra Tips:
  • For a heartier meal, consider tossing the antipasto salad with cooked short pasta, which will make it more filling.
  • You can also use leftover ingredients to create antipasto skewers or chicken sandwiches, providing a delicious way to enjoy any extras.
  • Adjust the ingredients based on what you have on hand or your personal preferences, making this recipe as unique as you desire!
