  • - 1 cup Medjool dates pitted
  • - 1 cup walnuts chopped
  • - 1/2 cup unsweetened shredded coconut optional
  • - 1 tablespoon coconut oil
  • - 1 teaspoon vanilla extract
  • - 1/4 teaspoon sea salt
  • - 1/2 teaspoon cinnamon optional

Instructions
 

  • Cooking Instructions:
  • In a food processor, combine the pitted Medjool dates and chopped walnuts. Pulse until the mixture is crumbly but begins to stick together.
  • Add the coconut oil, vanilla extract, sea salt, and cinnamon (if using) to the food processor. Continue to pulse until all ingredients are well combined and the mixture has a sticky consistency.
  • If using shredded coconut, transfer the mixture to a bowl and mix in the coconut.
  • With your hands, form the mixture into small balls, about 1 inch in diameter.
  • Place the formed energy balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  • Once chilled, you can enjoy them immediately or store them in an airtight container in the refrigerator for up to one week.
