Cooking Instructions:
In a food processor, combine the pitted Medjool dates and chopped walnuts. Pulse until the mixture is crumbly but begins to stick together.
Add the coconut oil, vanilla extract, sea salt, and cinnamon (if using) to the food processor. Continue to pulse until all ingredients are well combined and the mixture has a sticky consistency.
If using shredded coconut, transfer the mixture to a bowl and mix in the coconut.
With your hands, form the mixture into small balls, about 1 inch in diameter.
Place the formed energy balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
Once chilled, you can enjoy them immediately or store them in an airtight container in the refrigerator for up to one week.
