  • Add in one large egg to the mixture, and beat just until combined. In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add this dry mixture to the wet ingredients.
  • Mix until just blended to guarantee a soft cookie dough.
  • Drop tablespoonfuls of the dough onto a greased or parchment-lined cookie sheet, spacing them about 2 inches apart. Use the tines of a fork to flatten each dough ball slightly, creating a crisscross pattern on top.
