  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper optional for heat

  • Preheat your oven to 425°F (220°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  • In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried thyme, salt, black pepper, and cayenne pepper. Mix well to create a marinade.
  • Add the chicken thighs to the bowl and guarantee they're well coated with the marinade. For best results, let the chicken marinate in the refrigerator for at least 30 minutes, or up to overnight if time allows.
  • Once marinated, place the chicken thighs skin-side up on the prepared baking sheet. Discard any remaining marinade.
  • Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown and crispy.
  • Remove from the oven and let the chicken rest for about 5 minutes before serving. Garnish with fresh herbs if desired.
  • For extra tips, always guarantee that chicken thighs are at room temperature before cooking to help them cook evenly. If you want extra crispy skin, pat the chicken dry with paper towels before marinating and try not to overcrowd the baking sheet.
